This is one of my favorite appetizers that my mom makes! She actually calls it, “avocado salsa”, but it feels more like a dip than a salsa, hence the name change. It is delicious! As always, you can adjust measurements to taste, add or omit anything you’d like. However, it’s pretty perfect how it is!
2 ripe avocados, diced (but not mashed)
2 roma tomatoes, diced
1/4 cup red onion, diced
1 clove garlic, minced
1 tablespoon fresh basil, chopped
1 teaspoon fresh parsley, chopped
1 teaspoon fresh cilantro, chopped
6 ounces crumbled feta (I like to buy the block and crumble it myself)
1 teaspoon olive oil
1 teaspoon white or red wine vinegar (I’ve also used apple cider vinegar and it works)
Mix everything together in a mixing bowl, added feta last (I gently fold the feta in, so that it doesn’t break down too much). It’s best if you chill it for a couple hours before serving, but you can certainly dig in right away! Serve with tortilla or pita chips.
This looks yummy and easy! I could see it also being great on top of grilled chicken or plopped into a salad.
