Since I work from home, I eat nearly every meal at home, too. Lunch can sometimes be a struggle for me because I don’t want to spend much time cooking in the middle of the day, but I don’t like reheating food either. After trial and error and finding new recipes, I’ve finally found a few things that I can make a big batch of and eat throughout the week. One of those things is this super easy chicken salad recipe! I’m not typically a chicken salad person, but this one is so good and delicious. Mike loves it, too!
I’d seen iterations of this recipe all over Pinterest, so I decided to customize it completely to what I like. The key, for me, is the greek yogurt because I’m not a big mayonnaise fan. Swapping mayo for plain greek yogurt makes this so good and a bit healthier, too!
I’m a texture person and love crunch, so I put the crunchy things into my salad. You can customize this completely to your liking – add grapes, cranberries, omit the celery, swap the almonds for walnuts…whatever you like! This combination of ingredients is my personal favorite. It’s crunchy, flavorful, and filling!
What goes in it:
- 3 chicken breasts, baked in the oven and shredded with a fork*
- 1 bunch of celery, chopped
- 1/2 red onion, chopped
- 1 green apple, chopped
- 1/2-3/4 cup sliced almonds
- 2 tsp. lemon juice (to help preserve the apple!)
- 2 cups of plain greek yogurt
- salt and pepper
*this is my preferred method of the chicken, but you could use a rotisserie chicken, canned chicken, or whatever you like.
I just toss everything in a bowl and mix it up! It’s one of those dishes that you can’t really mess up, so play around with it a little bit to find what amounts of which items you like in it best.
I either serve it on croissants (because that’s the best way to eat chicken salad!), with pretzel crisps or crackers, or just by the spoonful. The amounts above make enough to last 4-5 days in the refrigerator between the two of us.

On 400 degrees for about 15 minutes (or until the internal temp is right!)
