Something about the warm weather and changing of the season makes me crave salads of all kinds. I eat salads all year long, but they seem especially satisfying in the spring and summer! I think it’s a combination of produce typically tasting better and more fresh, and me wanting to eat lighter entrees for dinner. Whatever the reason, I’m here for it. I’m lucky to have a husband that actually enjoys eating salad, too, so he welcomes them for dinner. The only requirement is that it has to have enough protein, which I can appreciate. If a recipe or salad that I create doesn’t have protein in it already, I’ll add chicken, shrimp or salmon to the side to create a whole meal out of it.
Here are a few salads that I’m adding to my list of recipes to try:
Shrimp, Asparagus and Zucchini Orzo Salad
Chicken Taco Salad (I’ve made this before – it’s one of our favorites!)
Mexican Street Corn Chicken Pasta Salad
Shrimp Cobb Salad with Cilantro Lime Vinaigrette
Crunchy Asian Ramen Noodle Salad – I would grill up some teriyaki salmon to add some protein!
Italian Chopped Salad – I would make some panko-crusted crispy chicken to serve alongside this one!
